25 May Hiking and collecting thyme in Sant Ponç, Corbera de Llobregat – Catalunya
My brother and Stefan came to visit in April to celebrate Easter. On a nice sunny day we went for a walk close to the old monastery of Sant Ponç. There are many beautiful walks around the area and in that season it is full of wild plants with flowers. One of them is thyme, my favorite medicinal and culinary herb.
Traditionally people believe the best time to collect thyme and dry it is Easter;it is believed that, this way, the dry plant keeps more of its properties. So I collected plenty of flower heads, always leaving some flowers in each plant and never pulling the roots.
When I got home I spread the thyme on top of a newspaper inside a wooden box, closed it and stored it in a dark ventilated place. I’m looking forward cooking with this thyme!
